Here are 3 good chicken recipes for dinner: Meatball Marinara | Mediterranean Chicken | Spatchcock Chicken. Not only are these recipes easy to make, they are super fun to indulge in.
1) Chicken Meatballs in Marinara Sauce
Ground chicken Meat (5 pounds)
1/2 bunch parsley, finely minced
4 eggs, mildly beaten
2 Teaspoons garlic (powder or granulated)
Parmesan (10 ounce), + extra for serving later (optional)
Breadcrumbs (1 cup)
½ tea spoon oregano (dry), basil, garlic and paprika
Salt & pepper
2 quarts marinara sauce (prepared or homemade)
Water (2 cups)
Ricotta cheese (optional)
Fresh basil (optional)
Step 1: Ina big bowl, combine parsley, Eggs, Ground chicken, 2 teaspoons garlic, onion powder ( or granulated), Grated Parmesan, Breadcrumbs, salt and pepper.
Step 2: Using a rubber spatula, gently fold & all the ingredients in the bowl.
[Optional] Cover bowl with plastic wrap and place mixture in refrigerator, allowing to rest for 20 minutes.
Step 3: Add some oil in pan, and preheat for 3 to 5 minute
Step 3: Using your hands or a large spoon / ice cream scoop, form mixture into 2-ounce balls and gently place in the pan.
Step 3: Fry the meat balls until lightly golden brown
Step 4: Add the marinara sauce and 2 cups water and continue to simmer until cooked for about 20 to 30 minutes.
Step 5: To serve, place meatballs & sauce on top of some spaghetti pasta.
Step 6: Garnish with a scoop of ricotta and/or Parmesan and fresh basil (optional)
Volaa……meatball marinara is now ready to be served !!!!
2) Mediterranean Stuffed Chicken
½ cup crumbled feta cheese
½ cup chopped roasted red bell peppers
½ cup chopped fresh spinach
¼ cup Kalamata olives, pitted and quartered
1 tablespoon chopped fresh basil
1 tablespoon oregano
1 tablespoon paparika
1 tablespoon chopped fresh flat-leaf parsley
2 cloves garlic, minced
4 (8 ounce) boneless, skinless chicken breasts
¼ teaspoon salt
½ teaspoon ground pepper
1 tablespoon extra-virgin olive oil
Ground Up Parsley (optional)
Step 1: Combine feta, red peppers, spinach, olives, basil, garlic & 1 teaspoon olive oil in a medium bowl.
Step 2: Use a knife to cut a horizontal slit through the thickest section of each chicken breast to form a pocket.
Step 3: sprinkle oregano, paprika, salt & pepper on the chicken, and rub it into the meat
Step 4: Stuff each breast pocket with the mix; then fold it up & secure the edges with tooth picks.
Step 5: Heat some oil in a large skillet over medium-high heat.
Step 6: Arrange the stuffed breasts, top-sides down, in the pan; cook for about 3 to 5 minutes until golden brown. Carefully flip the chicken; and repeat the same process. (If possible insert a coking thermometer into the thickest portion of the chicken – and check to see if the reading stands greater than 165 degrees F)
Step 7: Remove the chicken and place it on a plate, then Remove the wooden picks from the chicken
Step 8: Sprinkle some feta and parsley over the chicken
Volaa… Your Mediterranean Stuffed Chicken is now ready to be served !!
3) Spatchcock Chicken
One 4-pound chicken
1 tablespoon olive oil
2 tablespoon salted butter
1 tablespoon chopped parsley
2 teaspoons lemon juice
Freshly ground pepper
2 garlic cloves, crushed
Red skin Potatos [optional]
Step 1: Preheat the oven to 400°.
Step 2: [MAKING THE MIX] : Add the Butter, Olive Oil, Parsley, Garlic & lemon juice in a bowl , and mix well
Step3: Using poultry scissors / shears (or any other strong pair of scissors), cut along each side of the chicken backbone and remove it. Turn the chicken breast side up and press on the breastbone to flatten the chicken.
Step 4: season throughout with salt and pepper.
Step 5: Transfer the chicken to a large baking sheet & tray (skin side up)
Step 6: Tuck the mix between the skin and the meat (try and spread it out evenly without tearing the skin). Roast for 45 minutes, until the skin is browned
Step 7: Rub the remaining MIX on the chicken
[Optional] Surround the chicken with red skin potato & carrots & pour about 2 tablespoons of olive oil on it
Step 8: Bake at 450 F for about 40 to 50 minutes, and wait for it to turn golden brown
(If possible insert a coking thermometer into the thickest portion of the chicken – and check to see if the reading stands greater than 165 degrees F)
Transfer the chicken to a cutting board and let rest for 10 minutes before serving.
