Breakfast Burrito With Scrambled Egg, Chorizo, and Refried Beans Recipe

In my opinion a Breakfast burrito, is one of those dishes that has always been tasty, yet under rated !!

Its a regular burrito,with regular burrito ingredients (like guacanloe, beans, charizo etc) but the only difference is – we add eggs in it as well !!.

Serves – 2 Burritos

Prep Time – 30 minutes


  • 2 flour tortillas (10 inch) warmed for 20 seconds on each side in a frying pan
  • Eggs (4 large)
  • Mexican chorizo- 2 large links (approx 8 ounce), outerskin removed
  • Pepper Jack cheese (shredded) (2 ounce)
  • Salt
  • Ground pepper
  • Poblano pepper or green pepper (1 medium)
  • 1/4 cup (2 ounces; 55g) warm refried beans (click here for refried beans recipe)
  • Guacamole (1/4 cup)
  • Sour cream (2tablespoon)(1ouncze)
  • Hot sauce [optional]


STEP 1: In a bowl, whisk eggs properly and add salt & pepper. Set aside for 10 to 15 min.

STEP 2: Using a broiler with the rack on the top most position, or working directly over a gas flame, roast the pepper, rotating frequently, until you see the skin turning brownish/blackinsh. Let rest for 5 minutes

STEP 3: Use a cloth towel or paper towel to rub off all the rub charred skin from the pepper.

STEP 4: Scoop out all the Stem and seeds from the pepper, finely dice/mince it into very small pieces and set aside.

STEP 5: In a non stick pan (medium heat), add chorizo and turn heat to high. Keep breaking & cooking, until fat has melted and chorizo is cooked completely (it will start to turn brown), this proccess should take about 5 to 8 minutes).

STEP 6: Lower heat to low, add the eggs, and cook. Keep stirring constantly, until the eggs have become semi hard (but are still somewhat runny), (this process should take 1 to 2minutes).

STEP 7: Add the shredded cheese and minced pepper and continue to cook for about 1 minute (untill the eggs become a little fluffy)

STEP 8: [Adding ingredients into the Burrito]: Lay down the tortilla on a clean surface (1 tortilla at a time). Spread half the refried beans in the center of the tortilla, top with 2 tablespoon guacamole & 1 tablespoon sour cream and spread it evenly on top of the beans.

STEP 9: add half the eggs and cheese on top of the refried beans.

STEP 10: [OPTIONAL] add hot sauce as desired

Wrapping The Burrito

  1. Fold the tortilla sides in over the filling.
  2. Roll the bottom flap of tortilla up over the filling, (make sure you hold the sides tight as you wrap).
  3. Continue to roll it in until the burrito is tightly sealed.

Volaaaa…… Your Breakfast Burrito….is now ready to serve & eat !!
