Kabsa /Arabic chicken Rice is a Arabic ( middle eastern) dish. The rice is cooked in tomato liquids like (puree & paste), chicken broth & bahrat (Arabic masala)

INGREDIENTS:

Arabic Masala (Baharat | Arabic Masala)

) black pepper (1 tablespoon)
) Cumin seeds (1 tablespoon)
) 2 tsp coriander seeds
) 1 tsp cloves
) red chilli powder (1 tablespoon)
) Cinnamon stick (2 sticks)
) Cardomom Powder (1/4 teaspoon)
) nutmeg powder (1/4 teaspoon)

For kabsa Rice

) 800 gm chicken with bone chicken (cut into 8 to 10 pieces)
) rice (3 cups)
) 1 onion (cut into thin lices)
) ginger garlic paste (1 tablespoon)
) 2 lemon (preferably dry) (make a small slit)
) cloves (4 piece)
) cinnamon (1 stick)
) cardamom (3 piece)
) Bayleaf (1 piece)
) peppers (1/2 teaspoon)
) Cumin seeds (1 teaspoon)
) redchilli powder (1/2 tablespoon)
) turmeric powder (1/4 teaspoon)
) Arabic masala (1 tablespoon)
) garam masala (1 teaspoon)
) tomato paste (2 tablespoon)
) tomato puree (1 cup)
) Maggi chicken cubes ( 1 cube)
) Green chillis (2 big piece)
) salt
) drinking water
) small piece of charcoal
) oil & ghee

INSTRUCTIONS:

To prepare Arabic Masala

  1. Dry roast (in a pan) all the ingredients for the Arabic masala,  except paprika and nutmeg powder
  2. Then add the papirka & nutmeg powder and  grind it until its all dust and powder
  3. store it in a smell proof container.

To prepare Kabsa/rice

  1. In a pan add oil and add all the spices listed under “kabsa Rice” ( except for the lemon)
  2. Add the chopped onion and cook till soft then add ginger garlic paste and keep mixing until the raw smell starts to turn flavorful..
  3. Add the kabsa rice spices,tomato paste and tomato puree and mix it well ..
  4. Then add in the crushed magi chicken cube, chicken pieces, and dry lemon – give it a quick mix
  5. Add water and let the chicken cook for a few minutes.
  6. Once the chicken is cooked – remove the chicken pieces and add the rice (add more water if needed) – cook until the rice is fully done
  7. Mix  oil with the Arabic Masala and rub it onto the chicken pieces- and set aside for 5 minutes
  8.  Grill the chicken pieces until its a bit charred and brown
  9. Once the rice is cooked,  keep the grilled chicken pieces on top of it… in a small bowl keep the burning charcoal and gently place it on top of the chicken and add the ghee/oil to the charcoal, and close with lid to prevent smoke escaping…
  10. keep it closed for 5 minutes..
  11. open lid and serve hot
