What is Lyonnaise??…..Lyonnaise or “À la Lyonnaise”(as said in France)… is a French cooking term that translates to a dish with onions”. It can mean anything related to onions in a dish – cooked with onions, onions to the side, onions used for garnishing…..just pretty much anything with onions in it.
Serves: 4 servings
Cooking Time: 45 mins to 1 hour
) Russet Potatoes, peeled and sliced (2 Lb) (cut into 1/4″ thick round slices)
) Onions (2 small onions), thinly sliced rings
) Vegetable oil (3 tablespoon)
) Butter (3 tablespoon)
) Parsley, chopped (1/4 cup)
) Salt & Pepper
STEP 1: Place the sliced potatoes in a pan and cover with 2” cold water- boil on medium heat
STEP 2: Let the content simmer until the potatoes turn tender and a little crispy from the outside (this process should take about 4 minutes)
STEP 3: Drain out the remaining water, and set aside the potatoes
STEP 4: Heat 1 tablespoon butter and 1 tablespoon oil in a nonstick pan- until it starts to shimmer
STEP 5: Add ½ the potatoes and 1/2 the onions, and fry until the potatoes start to crisp and the onions become light golden (this process should take about 5 minutes)
STEP 6: Add the remaining oil, butter, onions & potatoes – and continue to fry, until all of the onions has become soft and brown (this process should take about 15 minutes). Keep mixing ever 1 minute without breaking the potatoes.
STEP 7: Remove from heat and add the parsley and give it a good mix.
STEP 8: Season with pepper & salt and serve
