A great salad should have a certain kind of uniformity to it; the ingredients in it should make perfect sense to your taste buds. In my opinion- pasta in a salad makes one of the greatest meals on earth.

This particular recipe is a pepper flavored version of the “ever popular” pasta salad.

Ingredients:

) Cooked Pasta [Gemelli or Fusilli] (1/2 kg)

) 100 gms cheese (preferably feta)

) Green Peppercorns (2 tablespoons)

) Cherry Tomatoes (each cut into half) (250 grams)

) Sliced onions (2 onions)

) Cut Black Olives

) Cut Cucumber

 

Dressing:

) Oil (5 tablespoons)

) Lemon juice (3 tablespoons)

) 1 lime rind (outer skin) grated

) Tomato juice (2 tablespoons)

) Garlic paste (2 teaspoon)

) Shredded nasturtium leaves (2 to 3 leaves)

) Shredded Basil (3 tablespoons)

) Shredded Mint Leaves (1 tablespoons)

) Salt & Pepper

) [OPTIONAL] Bread croutons

) [OPTIONAL] Chopped Parsley

) [OPTIONAL] Parmesan Cheese

 

Directions:

STEP 1: In a bowl mix the pasta, cheese, peppercorns, tomatoes, onions, cucumber & Olives

STEP 2: Whisk together all the “dressing ingredients” in another bowl.

STEP 3: Pour over the pasta mix and give it a good toss / mix.

STEP 4: Chill for about 30 to 40 minutes & serve

STEP 5: [OPTIONAL] Add the bread croutons to the pasta mix

 STEP 6: [OPTIONAL]  if needed – Garnish with parsley & parmesan cheese before serving
