Oyster sauce is widely used in Chinese Culinary, and for good reason. It is not just Full of flavour, but it is surprisingly easy to make. This recipe is for those individuals who want to cook up a quick meal, since it takes less than 30minutes to make.
- (with one) (4 pieces)
- (1/4 teaspoon)
- 2 cloves
- Ground black pepper (1/4 teaspoon)
- (medium size) (1/2 a onion)
- Chicken Broth (1/2 cup)
- (store bought) (2 tablespoons)
- Olive oil (2 teaspoons)
- Cooked rice (4 cups)
STEP 1: With a paper towel – Pat the meat till its dry. Cut each thigh in half ( preferably crosswise), making it into 2 pieces each. Rub the salt and pepper over all the pieces.
STEP 2: Chop the onion into small pieces.
STEP 3: Peel & chop the garlic into small pieces
STEP 4: Cut the bell peppers in half, remove all the seeds & stuffing, and cut into 6 to 8 pieces.
STEP 5: In a bowl, mix the oyster sauce chicken broth, soya sauce, brown sugar rice wine . [Mix well till the sugar fully dissolves – then set aside].
STEP 6: In a skillet, heat the oil at medium heat. Add the chicken pieces (2 piece at a time), and fry both sides until golden brown.
STEP 7: Remove the meat pieces from the pan and drain using a kitchen cloth or paper towels.
NOTE**Do not drain the oil or clean out the pan**
STEP 8: Add the garlic & onion into the “already heated” oil in the pan and cook till the onion becomes light brown and looks softened ( this process should take about 5 minutes) . Finaly..add the bell peppers into the pan. Cook briefly again, for about 2 to 3 minutes.
STEP 9: Pour the sauce ( from STEP 5 ) into the pan and bring to a boil, then add the chicken pieces back into the pan. Reduce the heat, cover, and simmer the chicken for about 10 minutes ( stir occasionally during this time )
STEP 10: With a fork- pierce each piece once or twice , then stir it for about 10 seconds and let it simmer again for 5 minutes.
· Pour hot over rice and Serve
