Chicken Fajita Stuffed Pepper

Stuffed Peppers Recipe With Rice

Total Time Needed: 35 – 45 min

Serves: 4 servings

Ingredients

) Bell peppers (4 medium size)-preferably,1 each of different colors (green, red, yellow, orange)

) skinless & boneless chicken thighs (12 ounces), cut into small pieces

) Kosher salt

) ground black pepper

) canola oil (2 teaspoons)

) chili powder (2 teaspoons)

) ground cumin (1 teaspoon)

) 1 white onion (large size), thin slices

) cooked brown rice (2cups)

) Mexican cheese (shredded / grated)

) Freshly squeezed lime juice (1 large lime)

) cilantro leaves (handful)

) Sour cream (2 teaspoons)

) 2 tablepoon tomato sauce (ketchup)

) Salsa [pico de gallo] (1/2 cup)

Directions:

STEP 1: Preheat the oven to 450 degrees F.

STEP 2: cut the peppers in half through the middle(from top to bottom), remove the stem and seeds

STEP 3: Heat 1 tablespoon of the oil in a frying pan on medium heat: Add onions, garlic & chicken and mix properly, let fry for about 2 minutes

STEP 4: Add chili powder, cumin, salt & pepper and keep frying until it just begins to smoke and turn brown (this process should be about 5 minutes)

STEP 5: Add the rice, tomato sauce, lime juice, cilntro, pinch of salt and keep stering for another 2 to 3 minutes

STEP 6: Set the half cut peppers on a baking plate & Fill “each half”, with the filling “upto the brim” of th pepper.

STEP 7: Pour about quater cup water onto the baking plate – making sure that the bottom of every pepper is touching the water

STEP 8: Bake at 375 . F for about 20 to 25 minutes

STEP 9: Remove the Baking Plate:- add the shreeded cheese and bake again for 1-2 minutes

STEP 10: Transfer the peppers to a plate and ad a lump of sour cream & salsa on top of the melted cheese….and serve with a slice of lime

Beef Stuffed Pepper With Rice

Stuffed Peppers Recipe With Rice

Total Time Needed: 30 – 35 min

Serves: 4 servings

Ingredients:

) Bell peppers (4 medium size)-preferbaly,1 each of diffrent colours (green, red, yellow, orange)

) canola oil (2 teaspoons)

) 1 large onion (cut into slices)

) lean ground beef – 12 ounces

) 7 spices (ready made pices, availabel at any groccery store)

) salt & pepper totaste

) cooked brown rice (2cups)

) cinemon powder (1 teaspoon)

) water

) tomato sauce (1 cup)

) 2 garlic piece -cut into medium pieces

) salted sunflower seed for garneshing [OPTIONAL]

Directions:

STEP 1: Preheat oven to 375 degrees F

STEP 2: Slice 1/2 inch from the top of peppers, open it up and scoop out the stem & seed from the top. Cut a very thin slice from the bottom
(this is done so the peppers can stand upright in the oven).

STEP 3: Heat 1 tablespoon of the oil in a frying pan on medium heat: Add onions, beef 7 spies, salt and peper- mix and let it cook till the beef i fully cooked

STEP 4: Add the rice, cinemon powder,mix it well and let it cook for about a minute

STEP 5: Add 1 cup of water and let it cook- till the water evapourates

STEP 6: Stuff the beef mix into the peppers: “upto the brim” of the pepper.

STEP 7: Pour about quater cup tomato sauce onto the baking plate – making sure that the bottom of every pepper is touching the sauce

STEP 8: Cut the garlic into 3to 4 pieces and place it into the sauce

STEP 9: Cover the pepper with the tops and place them in the oven for 25 to 30 minutes

STEP 10: Remove the peppers from the oven , place it on the plate and pour some tomato sauce onto the plate as well

STEP 11: [OPTIONAL] Take of the pepper top and sprinkle some salted sunflower seeds on top of the beef
